I spent a very large portion of my life traveling all over the world to compete in (and usually win) BBQ competitions. I'm extremely well-versed in all regional and sub-regional techniques, traditions, wood choices, and of course, ridiculous superstitions. I want to pass on my knowledge of primitive cooking, charcuterie, smoker design and home construction, as well as my lifelong respect for the Earth and all the tasty beasts that find their way into our bellies.
